A No Nonsense Cottage Pie Perfect for the Family

by admin No comments »

Cottage pie is referred to by some as the ultimate comfort food, and it is easy to see why this is so. This favourite pie dish contains items such as savoury meat, carrots and cheese, and is made with a mashed potato crust.

The pie is not difficult to make, and many cooking enthusiasts enjoy using Heinz ketchup as their secret ingredient. The zesty taste of the thick ketchup brand adds a specific flavour to the pie that family members and guests will find hard to put their finger on. The following is a recipe for no nonsense cottage pie that the whole family will enjoy:

Ingredients

• 400ml water
• 1 tbsp olive oil
• 6 tbsp Heinz Tomato Ketchup
• 1 beef stock cube
• 1 onion, peeled and chopped
• 400g lean ground beef
• 1 tspcornflour
• 2 tbsp Lea and Perrins Worcestershire sauce
• 200g diced carrots.
• 700g-800g potatoes, chopped and peeled
• 100ml milk
• ¼ tsp thyme
• 100g grated hard cheese
• 1 tsp Dijon mustard

Steps

1. Peel and chop the potatoes into large chunks and boil until fork tender. Drain and mash the potatoes and add milk. Season them to taste with butter, pepper and salt. Set aside.

2. Brown the beef in hot olive oil, drain, and add water. Crumble the cube of beef stock over the mixture and add thyme. Simmer on low heat for approximately ten minutes, stirring at least once.

3. Add the onion, carrots, cornflour and Dijon mustard and continue cooking until beef is tender, usually an additional 15 minutes.

4. Stir in Worcestershire sauce and Heinz Tomato Ketchup. Simmer an additional ten minutes, stirring frequently.

5. Line the glass baking dish with one half of the mashed potato and scoop in the meat mixture. Top the meat with the remainder of the mashed potatoes and garnish with grated cheese. Bake at 300 degrees for approximately 20 minutes or until potato crust has browned.

Similar to most casseroles, cottage pie tastes best when placed in the refrigerator overnight and reheated the next day to allow its many flavors to fully blend. Many cooks choose to serve cottage pie with a light side dish such as a salad to balance the entree’s density.
